New Livebait Head Chef Serves Up Stunning Menu


Livebait restaurant has a new Head Chef and an exciting new menu and combined with the best waterfront location in Melbourne, it is truly a feast for the senses.

Head Chef John McLeay has designed a menu with superb quality seafood and bold, fresh flavours that are perfectly matched by the modern setting of Livebait, positioned right in the heart of the Docklands with sensational 270 degree water and city views.

Passionate about south-east Asian food, John has travelled extensively throughout the region, in particular Thailand and Vietnam. This influence can be seen in the menu he has created for Livebait, with Asian influences coming through with a strong emphasis on modern flavours as well as quality regional produce.

Entrées include scallops with green curry panna cotta, cucumber relish and crispy ginger; fried soft shell crabs with chilli mayo, smashed green papaya and crispy pork salad; or the succulent roast prosciutto wrapped in quail stuffed with panzanella on white bean puree and pear pecan salad.

The wide selection of seafood mains includes tempura nori wrapped salmon with sesame pickled cucumber, dashi mayo, wasabi crumble and sticky soy; "Caccuccio", a Tuscan style seafood stew with grilled sourdough; or the spectacular saffron linguine with scallops, prawns, mussels, fish, calamari and crab tossed in chilli, garlic and parsley. You may be tempted however by John's signature dish of Pork Three Ways: char sui of shoulder on jasmine rice - crisp belly on apple, radish salad - five spice and shitake pie; or perhaps the chargrilled Portland rib-eye with parsnip puree, mushroom ragu and red wine jus. There are also several daily specials.

Make sure you leave room for desserts such as the exquisite Passionfruit plate: Brullee - Granita - Trifle - Sorbet; or the Vanilla, honey yoghurt panna cotta with poached peach and raspberries.

To finish, there is a premium selection of artisan cheeses sourced from Australia and around the world, served with quince paste, muscatels, matzos and walnut bread.

Livebait has a fresh, informal style and combined with the exciting new menu, co-owners Cath Claringbold and Damian Trytell have created something very special at their Docklands restaurant.
